Key Lime Cupcakes

Let me tell you, I am terrible at baking. This is not to say that whatever I bake doesn’t turn out…it’s more to say that I am terrible at experiencing the process of baking.

Baking requires three things at which I am woefully inadequate: precision, abdication, and patience.

When baking, one needs to mix together the exact amounts of each ingredient in order to achieve the right texture, consistency, and taste.  After combining the ingredients, one must then surrender them to an oven, and then wait to experience the outcome. (!!!!)

No lie, I am experiencing a little anxiety after just writing these sentences. You can imagine what it’s like to be around me when baking becomes necessary.

And when does baking become necessary, you ask? Well, friends, when I can’t find a decent Key Lime cupcake to save my life, then I guess I am going to have to flip on the oven and face my baking anxiety head-on. After a few trials and lots of deep breathing, I give you:

Key Lime Cupcakes

Makes 12 Cupcakes

The Ingredients:

  • 1 Stick of Butter (1/2 Cup) – Room Temperature
  • ¾ Cup of Caster Sugar (This is very, very fine sugar.)
  • 4 Tbs. Clearbrook Farms Key Lime Fruit Tart Filling – www.clearbrookfarms.com
  • ¼ Cup Half and Half
  • 3 Large Eggs
  • 1 ½ Cups Self-Rising Flour
  • 1 Tbs. Key Lime Juice- http://www.keylimejuice.com

The Tools:

  • Large Mixing Bowl
  • Mixer – Countertop or Hand
  • Measuring Cups and Spoons
  • Spatula
  • Cupcake Pan
  • Cupcake Liners
  • Toothpicks

The Action:

  • Pre-heat the oven to 350 degrees.
  • In the large mixing bowl, cream the butter and sugar together using the mixer.
  • Add the fruit tart filling, half and half, and eggs while mixing on low.
  • Slowly add in the flour to the mix as the mixer is running. Add just a bit at a time.
  • When the ingredients are combined, fold in the key lime juice with a spatula.
  • The batter will be thick with a little sheen to it.
  • Line your cupcake pan with liners and fill each liner ¾ of the way full.
  • Bake at 350 degrees for 20 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Key Lime Cupcake Frosting:

The Ingredients:

  • 8oz Cream Cheese – Softened
  • 1 Stick of Butter (1/2 Cup) – Softened
  • 1 Tsp. Pure Vanilla Extract
  • 4 Tbs. Clearbrook Farms Key Lime Fruit Tart Filling – www.clearbrookfarms.com
  • 1 ½ Cups Powdered Sugar

The Tools:

  • Large Mixing Bowl
  • Mixer – Countertop or Hand
  • Measuring Cups and Spoons
  • Spatula

The Action:

  • Combine the cream cheese, butter, vanilla extract, and fruit tart filling in the mixing bowl with the mixer.
  • While the mixer is running on medium-low, mix in the powdered sugar a little bit at a time.
  • Mix until combined.
  • You may frost the cupcakes using a knife or a frosting bag. It’s up to you. Garnish with a Key Lime.
